Cooking classes for adults

Become more confident, learn new skills or simply enjoy exploring different cuisines. My adult courses are fun, relaxed and suitable for everyone – with plenty to taste along the way.

All courses are held at St George’s School in Edinburgh


Showstopper cake class  

Let me show you how to create the moistest and most delicious triple-layer spiced apple cake. On this workshop we’ll make indulgent salted caramel sauce, caramel shards and a perfectly light and fluffy Swiss buttercream. We’ll then decorate your cake, smothering it in feather-light Swiss meringue buttercream, dripping down salted caramel sauce and garnishing with apple rings and caramel shards. Did someone say showstopper? It’s going to be spectacular!

Along the way I’ll teach you tricks and tips to get the best results when baking, as well as how to decorate all your cakes like a pro.

Sourdough and focaccia workshop

This class is ideal for anyone who doesn't have any prior knowledge of sourdough baking, or does and wants to learn more detail about how to make amazing sourdough bread in their own home kitchen. We will start with an introduction to the theory behind the process and then it’s time to get stuck in. You will learn everything from creating and maintaining your own starter to folding, shaping and baking.

Each participant will take home a loaf of freshly baked sourdough and a jar of my organic starter.

Pasta & sugo workshop

Of course, there’s absolutely nothing wrong with opening a bag of dried pasta – I do it every week – but I’d love you to try making your own. It’s fun, therapeutic and an amazing way to level-up a special meal – you don’t even need any special equipment! I’ll show you how to make perfect pasta with or without a pasta machine, with from-scratch dough and delicious sauces to match.

 

My special Christmas workshop

If you want to truly spoil your friends and family this festive season AND get ahead of the game, then pop my special Christmas workshop into your diary. We’ll create gorgeous seasonal canapés, party treats and some beautiful home-made gifts together, ushering in the festive season with a swing. Michael Bublé soundtrack optional. 

Bake the classics  

Here’s what they don’t tell you on Bake Off – most bakes are based on a fairly short list of classic techniques. Master one, and you’re on your way to mastering a whole range of classics you’ll want to make again and again. So if you’re ready to learn the secret of perfectly light, fluffy, scones, crumbly, buttery shortbread and rich, fudgy, decadent brownies – and how the techniques can be endlessly adapted – this is the class for you.

Italian feast

Full disclosure: I have Italian roots and so these flavours and textures mean ‘home’ to me. Join me for a day working on a beautiful, authentic three-course meal that will blow your guests’ socks off. As you’d expect, the menu will change seasonally, but will feature dishes like wild mushroom bruschette, pork saltimbocca with sauteed garlicky greens, and Sicilian lemon pannacotta.
